I like to make a nibbles tea for us as a family on Valentines day. I like lots of yummy bits to pile up and indulge in. Mini Baked Potatoes are perfect as nibbles as part of a buffet spread for Valentines. For this dish the star of the show are the yummy new season Cypriot Potatoes from Tesco. This recipe is so simple but really is tasty.
You will need:
A bag of Cypriot New Potatoes from Tesco
A tub of sour cream and chive dip
A pack of bacon bits
Some grated cheese (I used Cheddar)
A handful of spinach
A pinch of salt
The very simple method…
Wash your potatoes and very simply cut a cross in the top of each one.
Pop these onto a baking tray and sprinkle with a tiny bit of salt.
Cook at 180 for 35 minutes or until soft inside but crispy on the outside.
The toppings…
To prepare the toppings firstly fry the bacon bits and then when they are all crispy add your spinach so it wilts. Stir it around but don’t leave it in there for much longer than 2 minutes.
Have everything else out ready to top the potatoes when they are cooked.
And top…
Position your cooked Cypriot New Potatoes on your serving tray; giving each one a squeeze to open it up as you do so.
Add your toppings. I went for grated cheese and bacon on some and then the sour cream, spinach and bacon on the others.
Once topped pop on the table and dig in… I promise you they will not be around for long.
You could top your Cypriot New Potatoes with anything you fancy but be sure to grab your bag from Tesco before the end of March.
